Sweet Potato Cloverleaf Rolls
Just as the name says, these rolls are shaped like clover leaves. The natural sweetness of the sweet potatoes make this bread one my favorites. Many of you would know this bread as a Thanks Giving bread, but as for me, I can have it any day!
Here’s how you can make this bread with the help of your Cuisinart pizza dough maker:
Ingredients:
- 6–8 ounces of Sweet potato, peeled and cubed
- 1/4 cup of nonfat dry milk
- 2 tbsp. of unsalted butter (set at room temperature, cut at 1/4 inch each)
- 2 tbsp. brown sugar
- 3/4 tsp kosher salt
- 2 cups bread flour
- 1 tsp yeast
- Cooking spray
- Milk for brushing tops of rolls
Procedure:
Step 1. Put the sweet potato cubes in a pot filled with water. Water should be at least an inch above the level of the potatoes.
Wait for it to boil, then reduce heat and simmer for about 15-20 minutes until potatoes are tender.
Step 2. Drain the sweet potatoes, but save the cooking water.
Step 3. Measure out the necessary amount of reserved cooking water for the size of the recipe you are making and let it cool to 90°F.
Step 4. Combine all ingredients in a baking pan and mix it in the bread maker.
Step 5. Deflate the dough then cut it into small, equal sizes.

Step 8. Array three small dough balls in each muffin cup then cover with a plastic wrap and allow it to rise until its size doubles (about 30-40 minutes).
Step 9. Preheat oven to 375°Fahrenheit. When rolls have doubled in size, brush the tops with dry milk.
Step 10. Bake in a preheated oven for 20-25 minutes, until lightly browned and hollow-sounding when you tap it.
Step 11. Take them out from the muffin tins and serve warm. May be made ahead and reheated to serve.
